Cherries are a perfect addition to mead due to their slightly tart flavour cutting through the sweetness of the mead. As well as being an excellent pairing to mead, black cherries are often associated with love and protection, a bottle would make an excellent gift for a loved one.
Geans, or wild cherries are hand-foraged from around the Rookery in early autumn. The mead has a hint of sweetness but is dominated by the dryness from the wild cherries. This mead works well as an accompaniment to food, particularly red meats and tomato sauces.

A huge amount of research goes into their meads, looking to evidence in the historical and archæological record for source material, then back-engineering these ancient drinks to create modern and exciting products. Almost all the ingredients, down to the wax seal, are foraged and sourced from the local area; if there was ever an authentic mead, this is it.
No sulphites, sugars or syrups are ever used by the Rookery.
