Lavender is a distinctively fragrant sweet summer bloom. Sometimes referred to as 'the tranquillity herb', lavender is commonly used in relaxation herbal blends - lavender mead is the perfect tipple to wind down with on a cosy evening.
Complex and rich, this mead takes a couple of tastes to settle on the palate. This first taste will give a strong lavender hit but this mellows very quickly, giving over to gingerbread, caramels and burnt sugars. Made with only three ingredients: honey, water and dried lavender flowers from Provence.

A huge amount of research goes into their meads, looking to evidence in the historical and archæological record for source material, then back-engineering these ancient drinks to create modern and exciting products. Almost all the ingredients, down to the wax seal, are foraged and sourced from the local area; if there was ever an authentic mead, this is it.
No sulphites, sugars or syrups are ever used by the Rookery.
